Poor Man’s Crab Cakes
Ingredients
- 4 cups shredded zucchini
- 3 scallions, trimmed & finely shopped
- 1/2 a celery stalk, finely chopped
- 1/4 cup + 1 Tablespoon ground flax seed
- 1/2 cup mayonnaise (soy free)
- 1 1/4 cups millet flour
- 4 eggs
- 1/4 teaspoon cayenne seasoning
- 1 Tablespoon parsley
- 2 Tablespoons Old Bay Seasoning
Makes 14-15
- Mix together all ingredients except zucchini. Mix well.
- Add zucchini & evenly stir together.
- Preheat oven to 360.
- Pour 1/4 cup of batter onto a lightly greased frying pan on medium heat. Saute on each side just until you are able to flip the cake with a spatula.
- Remove from frying pan and place on a baking sheet.
- Bake at 360 for about 20 minutes.
Notes
- The purpose of frying the cakes is just to give them a slightly browned appearance along with a little bit of a crisp. The purpose of baking is to minimize the frying.
- You can use less Old Bay if you do not like a strong Old Bay flavor.
- These freeze very well!
