Salted Pumpkin Seed Christmas Bark
Ingredients
- 8 ounces unsweetened chocolate liquor
- 1 Tablespoon coconut oil
- 1 Tablespoon coconut cream or full fat coconut milk
- 1/2 teaspoon vanilla extract
- 20 drops liquid stevia extract
- 1/2 cup raw pumpkin seeds, roughly chopped
- 1/3 cup organic raisins, roughly chopped
- 12 Deglet Noor dates, chopped
- 1/2 teaspoon chunky sea salt
Makes one 8×8 pan of chocolate bark
- Line an 8″ x 8″ glass baking dish with parchment paper and preheat oven to 360°F.
- Melt chocolate liquor on very low heat in a sauce pan with the coconut oil, coconut cream, vanilla, and stevia.
- Stir the chocolate mixture religiously until chocolate is melted and all ingredients are well incorporated.
- Pour chocolate into parchment paper lined glass baking dish.
- Sprinkle melted chocolate with the chopped pumpkin seeds, raisins, dates, and sea salt.
- Place glass baking dish in the warm oven for 5 minutes.
- Optional: Press bark toppings down into bark after removing from the oven.
- Store in refrigerator until serving.
